Can't make a decent chicken soup, no matter what. The chicken gets all string and stew-y. And what's the secret for great potato soup?
If you have suggestions, bring 'em on. Oh, did I mention that I don't do exotic or complicated? I just want plain, hearty, throw-it-in-a-pot soups. I've developed an allergy to cooking.

Nanny, Here's the secret to chicken soup. Don't leave the chicken in so long. Take the chicken out when it's tender and done, and no more. (Like an hour?) Then let it cool in a big bowl and keep the lid on the pot and let the broth/veggies mix (carrots, onion, celery tops) cook another hour or two, just simmering, for better flavor.
Then scoop out the too soft veggies with a slotted spoon and discard, & pick the chicken off the bones (bigger chunks of white meat and littler pieces of the dark). Bring the broth to a good roiling boil, and put the chicken pieces and some noodles in it (half a bag?).
Johnny goes to extra trouble to saute fresh carrots and minced garlic in oil 'til slightly done and puts those in with the meat and noodles. Oh, and don't forget the salt and pepper, of course.
All I do for potato soup is cook the cut up taters and some onion in water, and then add an equal amount of milk and a big blob of butter and salt and pepper and heat to almost boiling. That's how Mom made it, I think.
OK, everyone else! Contribute! Correct me, or whatever. We've gotta keep those meals coming or George will starve. My kitchen and I are having a contest right now to see who runs out first. Sometimes I like to see how low I can get before forcing myself to the grocery. I've still got a bit of TP so right now I'm ahead but that'll be what finally gets me out of the house.
Oh, thank you! Your chicken soup is the best, but do you strain the broth after cooking the chicken, and do you start with the chicken AND the veggies all thrown in there together? And a whole chicken, right?
Is the potato soup thin and runny?
Anyone have a recipe for chicken and corn chowder that doesn't use milk?
A whole chicken, cut up or not, and yeah, throw the onions and carrots and celery tops in at the beginning but they get thrown out. Sometimes I strain the broth but usually just skim the veggies out with a slotted spoon the best I can. Just remember that you won't the broth cooked down but not the chicken or yeah, you'll choke to death on the dry stringy pieces.
I did it! I made yummy chicken noodle soup in my crock pot yesterday! Thank you for the tips.
